I thought it was that time where I would begin to share my love for Paleo and healthy eating with everyone and hopefully persuade you to make the same lifestyle change that I’ve made, or at least get you on the right track.
But I thought I would tell you a little about myself first.
Ever since I was a little girl, cooking was my life. I loved baking, cooking, eating, and doing it all with my family. Especially my mom. She is an amazing cook. Especially her baked goods from rugalach to coconut macaroons to her infamous beef brisket that no one in this world can replicate. I went to high school for culinary and pastry arts and hated my teachers but loved the fact that I got to work with food every day of high school. I competed in a bread basics competition and took third place out of over 100 participants. I guess you could say baking and cooking is in my blood.
I continued onto college where I studed hospitality and gotta say, didn’t love it. But what are you gonna do, right? But that is where a lot of my health problems started. I became obsessive with my weight and would do anything to look good even if it never showed. I took pills, stopped eating, tried a million different diets, detoxes, etc and nothing worked. I would workout nonstop and just saw no results. It was a rough time for me and once I got out of college i knew I had to make a serious change.
When I got out of college about a year and a half ago, I took on rock climbing. I have a huge fear of heights so I don’t know why but I did and now I can happily say I’m addicted. I made amazing friends, I am now capable of doing 7 pull ups and lost 10 pounds in the first two months of doing it. That’s when I knew I was finally on the right track, but my eating habits still sucked. BIG TIME!
That’s when my friend told me about paleo and I thought she was INSANE! My favorite food besides steak was bread. I loved it, I loved sugar, I love chocolate. And to this day, I still do, and always will. But one day I decided to give it a shot. I went on a food shopping craze and bought all fresh produce and all the meat I possibly could before it would all go bad. Then every single morning, I got up, made an omelette, prepread my lunch for work and snacks, drank water, and went climbing up to 5 times a week. I quickly lost 8 pounds. It was incredible! I felt brand new, I was energetic, happy when I looked in the mirror, and more confident than ever!
So I continued that for months on end with of course some cheating here and there but despite that, the weight still stayed off because I would always go back to my healthy eating habits.
Then, I joined crossfit. Oh man, what an experience. I thought I was in shape…until I went there. But I loved it. As much as I would be petrified to go and convince myself that it was awful, I knew deep down I loved it. But then my knee started acting up again because of my acl replacement surgery I had a year ago. So I stopped crossfit, while at the same time, I was dumped, work wasn’t very good, and I was going through a lot. So the combination put me back at square one.
But recently, I moved to Boulder, Colorado: the healthiest city in the US. Everyone here is active, a little crazy, and into the health food and organic movement. Living here has helped me with my healthy eating again and I am down 6 pounds and going strong. I figured this would be the perfect place to really explore paleo and new food. Don’t worry, I will be having some beers or a piece of cake like any human being, but whole and healthy foods will always be by my side. And this blog is here to share my experiences and recipes throughout my journey.
This is where the journey to health and happiness begins…..but never ends.
